I've never been more upset. Is it too late to replant?

Probably a raccoon, especially If you had any disturbed soil anywhere in the garden.
They like to dig up freshly disturbed soil to look for things to eat.
I had one dig up and a peach sapling I had just planted the day before looking for goodies in the fresh dirt.

Are they photoperiod plants? As long as they have a reasonable root structure left they'll likely survive if you plonk them back in the ground.

They are photoperiod, but the roots left are pretty gnarly. Most of the roots stayed in the ground.

It's a weed, not an orchid. Given the chance to survive they usually do.

I think you've got a good chance of saving them, especially since they are photos. They're being subjected to extreme stress that would likely herm autos as they would still be recovering at the same time they'd be transitioning. You've still got a long growing season left, plenty of time for photos to bounce back and relax a bit before flower. I'd still watch them like a hawk for stress herming, but I think the odds are in your favor to save them.

No worries mate. It's easy to put the plants on a pedestal and forget what they are when you care about them so much. Of course damage has been done and it's a substantial setback, but I don't think all is lost. I sent you a message on SXC if you want to chat there.

Replant and water them really well because you need the soil to bind along the remaining root bed. If you're doing organics I'd give them a quick blast of seaweed (not kelp) at the root. Seaweed is full of cytokines and encourages cell division.

Any recommendations for locally hosted cameras that I don't have to incriminate myself to Big Tech to use? Weed farmin' is still a federal crime so I don't need Jeff Bezos watching my footage.

Anything that is poe and you can block it's access to the Internet. Reolink is my go to and then I change it's DNS to a dummy one and the block it's Internet on my router.

I think it was a raccoon. It likes to dig up my potted plants. And I also think that I may have left my fence open last night before I went to bed, because I had just fed the plants top dressed some shit. God damn it this sucks!
