But Wile E. Coyote didn't run after the Road Runner. He was a "Super Genius" so he used traps and contraptions and purchased solutions to achieve what he was above. If he had just chased after the Road Runner, he would eventually catch it.
That is part of the joke.
Iirc there's an episode where he chases RR and catches it, then scratches his head for a bit wondering what to do next.. then ties it to a rocket for no reason, with entirely expected outcomes.
