Id recommend stopping after you finish the series as there aren't any episodes after that

Can't argue with that. But usually when I'm interested in a series I watch the episodes of each season in a random order, and I wanted to make sure I wasn't going to accidentally start with the shit parts.
If you don't actually care about continuity then this may not matter to you, but be aware that season 2 ends with a solid ending for the series. Then The Book of Boba Fett came out and was doing so poorly they shoved the season 3 premiere of Mandalorian as one of the episodes of Boba Fett. So if you went from the s2 finale of Mandalorian to the first episode of s3 of Mandalorian you'll be confused about how many things changed.
Also, season 3 of Mandalorian is when things get silly, like the Jack Black episode and the Pirate King episode.

Long story. When I was a kid, I found a cool semi-epistolary 8-book series at my school library about a modern-day kid named Pendragon hopping through a portal to save alternate timelines. It was so cool to me that the series jumped around in time so we had to figure out when we were in Pendragon's timeline. Turns out my school shelved them in alphabetical order, and they also lacked the first and last books. I had a blast & I've been trying to recreate that experience ever since.
