I think your criticism is too harsh for what it was. IMO it was presented quite take-it-or-leave-it; a potential red herring just like Andor’s sister. There is no reason to interpret what the woman said as anything other than religious ravings
This is certainly not supported by anything telegraphed on screen. The force healer women was not portrayed as a religious nutjob.
Since the show subverts expectations in a few other ways, we can't trust what is "telegraphed" — it could be a misdirection.

The final scene shows Bix carrying a baby, but the only information definitively contained in that scene is the fact that Bix has a baby. Other stories might use to imply the baby will be someone great or important... but I think it is much more in line with the rest of the show if the baby ends up unremarkable.

Yeah, they honestly dropped the ball several times on tying together the themes and story at the end. I can't properly do spoiler tags right now, but I'll just say I'm not too happy with the final episodes or how some of the characters were treated this season really. Cassian was very back and forth.
