So to say you have a memory of an elephant could mean your memory is very good.
The twist is that this can also mean you remember seeing an elephant, which is what the second line implies.
Oooooooooh. Ok. Confirmed. K. Am dumb. I even knew about the elephants memory from a pbs documentary I watched 10 years ago. Still didn't put that together. Instead of putting 2 and 2 together and getting 4, I put 2 and null together, and got error.
An old saying that Dads are likely to have heard is "an elephant never forgets". So "I have the memory of an elephant" is saying "I never forget."
Unless you're making a Dad joke.
In which case it means "I remember seeing an elephant once".

I haven't heard the expression "an elephant never forgets" in quite a while. It's funny how some expressions come and go. "Tight as the bark on a tree" for cheap and "boiled as an owl" for drunk are ones that I know, but haven't used in conversation in years.
