I think I've tried that recipe before! Not my favourite, as I don't really like mushrooms (my partner does, hence trying it). We've had more success with green lentils (red ones make it a bit too gritty), and there's a BOSH recipe using vegan sausages (Richmond's work well) which we love. Just in case you're still working out your favourite!
I think I blended the walnuts though, or used a good processor. Too lazy for chopping.
I've had lentils based bolognese at a restaurant before. It wasn't bad, but I prefer this one by far. I guess we all have different tastes :)
