You should really watch the first one before anything else. Part of the absurdity of the series is how much it escalates as they go.
I've only seen 7, 1, and I think 3, in that order, and I think I agree, watch 1 and then one of the late-stage ones and then just imagine what could have possibly happened in between to connect those dots
2 Fast2 Furious was a bisexual awakening for me. Idk if others well have that reaction. But Paul Walker and Tyrese Gibson chemistry is off the hook in the film.

those movies are so spectacularly dumb my brain cannot catalogue anything about them. I think I've seen like 3 of them, but I couldn't tell you which ones or what happened with a gun to my head.
I've seen them all, and can only vaguely remember the plot of the first 3 or 4. From 4 on, they get very muddy
I don't know how people do it. I'm pretty good at remembering plot and context details from movies, including action flicks.

Fast and Furious X is probably the dumbest one. it's also the most recent. honestly i recommend seeing all of them because they're all dumb and weird for their own reasons

The only "good" ones are the first and Fast Five, meaning they're the least ridiculous. I'd recommend watching anything from 8 to 10 or the one with Jason Statham and The Rock ("Shaw and Hobbs")
I've only watched Fast 4, but would strongly recommend reading 2 Trans 2 Furious to up your enjoyment of the movies
