i redeemed myself tonight for a culinary failure a few weeks ago. I was making tofu piccata (idk what that is but the recipe I'm given is basically tofu dredged in flour, fried, then slathered with a lemony margarine based sauce filled with capers

anyway I fucked it the fuck up last time because I FOLLOWED THE RECIPE like a BIG DUMB IDIOT and when it said like 9 cups of vegetable stock and like 6 cups of lemon juice I was like AIGHT, BET

it was soooo fucking acidic that like, at least I'm pretty sure the acidity is why, I couldn't use corn starch to thicken it, it just made starch foam at the top. It was this nasty runny lemon ass shit

anyway I made it again tonight with like A CUP of lemon juice and it was more like a good buttery lemon sauce rather than an assault on your senses

and yes I WOULD have arrayed them in shingles or something but the breading sticks to itself and gets ripped off and I was expecting to feed maybe like 5 people with this tonight so I just did it like this
