I had gator recently that was a plain fillet and not a fried nugget or something like that. I thought it was like a cross between chicken and a meaty fish. It tasted like chicken, but there was a slight sponginess and the way it pulled apart reminded me of fish
Sponginess is a great word for it! I wanted to describe it as kind of fluffy, but that felt not quite right
It's been so long that my description might not be reliable, but I remember it as a slightly fishy, gamey chicken, but much softer and juicier than other game meats
Gardein's "ultimate" plant based chick'n nuggets already taste kind of fishy IMO, and I've found that soaking them in dill pickle juice before cooking makes them taste a lot like I remember gator tail being like

I like duck if it's done properly, but eat kangaroo more often.
Kangaroo has to be done right. A good kangaroo roast can be better than lamb or pork.
Tofu is tried and true and super versatile.
Learning to cook seitan feels like a veritable lifehack the first time you experience turning 2 cups of gluten powder into a massive bounty of sandwich slices.
Things like Beyond (ideally their avocado-oil versions) are a bit too pricy, but a nice change of pace when they go on sale. They're good for those random burger cravings. Same story with those breaded Gardein patties.
Soy curls are a miracle.

Horse! It's actually probably just my favourite meat in general even including the others
I imagine horse is a lot like beef as Tesco got away with using horse meat in ready meals for who knows how long.

Probably venison and/or wild boar (if you don’t count the latter as pork). My partner’s parents are hunters and they’ve given us some excellent boar steaks and self made game sausages before.
Venison is great but the markup is insane. In Scotland deer are hunted to stop them from destroying entire forests and the meat is sold to restaurants at a loss just so that it's used for something. Then those restaurants inflate the price massively because it's "exotic"
It’s not as bad here in Germany but knowing hunters does pay off.

Crab. Always looked forward to the few days a month my family have crab.
Venison probably. Boar is also good.
On poultry, I'd go turkey over duck. Not keen on goose, too fatty.
I don't think I've ever had "good" turkey so I would put it at the bottom of my poultry, goose is definitely fatty but I consider it like the wagyu of poultry. Duck is in the middle but still more decadent than chicken. Squab is near the top as well.
